The 2008 vintage is a blend of 77 % Cabernet Sauvignon from Darling and the Helderberg slopes, 14 % Merlot from Simonsberg Stellenbosch and 9 % Cabernet Franc from Darling. A total of only 26 barrels were produced. All the grapes were handpicked and sorted by hand prior to fermentation. Most of the fermentation occurred naturally, pumping over of the fermented juice was done three times a day. Total skins contact on the Cabernet Sauvignon was 26 days; Cabernet Franc 22 days and the Merlot remained on the skins for a total of 29 days.

After pressing, the wine was racked to 225 litre French oak barrels to undergo malolactic fermentation.

The wine spent a total of 26 months in 85% new French barrels in which time it was only racked twice, before being blended and bottled on the 3rd of February 2010. True to the style of Epicurean it is an elegant, subtle and refined wine with very good aging potential.

The wine is showing dense flavours of currant, mineral, ceder, cigar box and with a core of dark berry. Well integrated tannins and full bodied with out being weighty; leading to a very long well rounded finish. It is uncompromising, elegant, focused and tight with silky soft tannins.

Drinking well now but will benefit further with maturation.
