    The wine was made from low yielding Cabernet Sauvignon (15 years old) and Merlot (9 years old). All the grapes were handpicked and transported in bins to the winery. Upon arrival the grapes were cooled down to 15 degrees Celsius and hand sorted.

    For the 2004, our Cabernet came from Annandale, and the Merlot from Annandale and Remhoogte. The grapes were then hand sorted and fermented in stainless steel – 13 days for Cabernet, and 11 days for Merlot. Skin contact was 26 days for Cabernet, and 31 days for Merlot.

    A full bodied wine with velvety tannins leading to a generous and silky mouth feel. The nose has subtle clean black cherry, plum and tobacco flavours, while the finish is long with a creamy vanilla aftertaste.

    Our 2006 vintage was fermented in stainless steel tanks at 28 degrees Celsius for 10 days, followed by skin contact on the Cabernet Sauvignon for 28 days, and 25 days for the Merlot and Petit Verdot. The penultimate product is then matured in new French Oak barrels for 18 months, before being bottled for enjoyment.

    Due to interesting weather patterns during the growing season, blending this vintage proved to be an exciting challenge. The result is an intense, compact and concentrated red wine with intense fruit flavours. While this vintage can benefit from further bottle maturation, it’s suitable to drink now when decanted.

    The 2008 vintage is a blend of Cabernet Sauvignon from Darling and the Helderberg slopes, Merlot from Simonsberg Stellenbosch, and Cabernet Franc from Darling. All the grapes were handpicked and sorted by hand prior to fermentation, and a total of only 26 barrels were produced.
